Wash and dry the tomatoes, cut them into two pieces and slice the red onion finely.
Put the tomatoes and the onion, pour 1 spoon of oil, ½ teaspoon of our Sauce mix, a pinch of salt and pepper to taste into a bowl . Mix well all the ingredients and leave it all to develop more flavour.
Cut home-made bread into 8 two-centimeter-thick slices, pour on top of them a bit of olive oil and sprinkle our Sauce mix to your taste.
Use only home-made bread because it is the most appropriate for this type of dish, its compact crumbs remain crunchy even after absorbing well the seasonings. Do not use sandwich bread or any other type of packaged bread (even if it is specifically made for bruschettas). Bread which is too processed or is made from other types of flour and grain, as well as Arabic bread, focaccia, milk or olive bread, baguettes, rolls or michetta bread are not suitable either. In fact, once they are cooked, they tend to harden and do not get bruschetta-style features.
Toast the bread from both sides so that it becomes crunchy by using the grill of the oven or a nonstick grill pan. The secret of making this recipe succeed is to make the bruschetta bread hot and crunchy. You can toast it in the oven, on a nonstick pan or on a grill pan. Yet, the tastiest one is the one cooked on a hot grill!
All you need to do is cut enough thick slices and cook each side for two minutes until they become golden outside and soft inside. When all the slices are brown, take them one by one and spread a generous quantity of fresh goat cheese and then put on the tomatoes and the onions.
Serve them once they are cooked and still hot. The contrast between the hot bread and the fresh and soft cheese will astonish the palate of all your guests.
